Sweet Potato Smoothie

Ingredients
- 1/2 sweet potato
- 1/2 banana
- 1/2 cup almond milk
- 6 oz Trader Joe's Vanilla Bean Greek Yogurt
- 1 tbsp peanut butter
- 1 tbsp ground flax seeds
- 1/2 tbsp ground cinnamon
- optional toppings: walnuts, slivered almonds, banana slices
Instructions
- The night before, place one medium size sweet potato in the microwave for 4 minutes. When cooled, peel the skin off and place in a small baggie and place in the freezer overnight.
- Combine all ingredients into a blender and top with any optional toppings for an additional crunch!
