Roasted Brussels Sprouts and Sweet Potatoes
Ingredients
- 1 pound Brussels sprouts
- 1 large sweet potato
- 2 cloves garlic minced
- 1/3 cup olive oil
- 1 tsp cumin
- 1/2 tsp garlic salt
- 1 tsp salt
- pepper to taste
- 1/4 cup pecans
- 1/4 cup dried cranberries
Instructions
- Preheat oven to 400 degrees F
- Cut Brussels sprouts into halves and place in a large bowl
- Peel sweet potato and slice into quarters and add to the bowl
- Add minced garlic, olive oil, cumin, garlic salt, salt, and pepper to bowl and stir to coat
- Line a large sheet pan with foil
- Pour veggies onto pan and roast for 30 minutes
- Place veggies in a serving bowl and garnish with pecans and cranberries
