Plant-based Salad
Salads don't have to be boring. Use up leftovers, try different combinations of foods, add texture and a variety of tastes. Adding a variety of ingredients adds a lot of color to your salad as well as a good combination of fat, protein, carbohydrates, and fiber.
Ingredients
- 1 bell pepper
- cherry tomatoes
- 1/2 cucumber, chopped
- lentils
- 1 avocado, chopped
- olives
- 2 tbsp feta cheese
- 1 tbsp sunflower seeds
- 2-3 cups salad mix
- veggie burger of choice
- 2 tbsp favorite salad dressing
Instructions
- Wash and cut up all vegetables.
- Cook lentils and veggie burger according to package directions.
- In a large bowl, add desired amount of salad mixture.
- Add the remaining ingredients and toss with dressing.
