Ingredients
- 2 cups brown rice pasta
- 1 medium zucchini peeled and diced
- 1 red pepper cut into thin strips
- 1/2 cup frozen peas
- 2 teaspoons olive oil
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- grated parmesan cheese optional
Instructions
- Cook pasta according to package directions; drain and keep warm. Meanwhile, heat olive oil in a large skillet over medium-high heat. Add zucchini, red pepper, peas, Italian seasoning, and salt. Cook for 5-10 minutes or until vegetables are tender. Remove skillet from heat and stir in cooked pasta. Serve with grated parmensan cheese, if desired.
