Ingredients
- 1 pound chicken breast tenderloins
- 1/2 cup almond flour
- 2 tablespoons ground flax
- 1 teaspoon salt
- 1/4 cup coconut oil melted
Instructions
- Preheat oven to 400 degrees. Combine almond flour, ground flax, and salt in a large dish. In a separate dish, add the melted coconut oil. Dip the chicken tenderloins into the coconut oil and then coat with the almond flour breading. Place chicken in a single layer on a rimmed baking sheet covered with parchment paper. Bake for 25 minutes, turning after 15 minutes. Remove from oven and serve with your favorite tomato sauce.
